Vegetarian Cottage Pie

Serves: 4






Ingredients

1 large onion, chopped

1 large carrot, sliced and each slice cut into four quarters

3/4 cup peas

4 large potatoes

1 415g can of Sanitarium Casserole Mince in Gravy //Note: You can also use TVP

1/2 Tbs gravy powder

1/2 cup milk

1 Tbs margarine or butter

1/2 Tbs oil


Method:

Prepare the potatoes first as they will be take the longest to cook. Start the water to boil first then chop the potato into small chunks, this will help it cook faster. While this is on a simmer start preparing the other vegetables.

If using frozen peas measure out 3/4 cup and put in a container with some boiling kettle water

Chop onion into chunks

Slice the carrot into round pieces and cut into quarters if a thick carrot and halves if thinner

Oil the fry pan and cook the onions taking care not to burn them

Add the carrot in and allow to cook further until semi soft

Add the tin of Casserole Mince or TVP

Add in the gravy powder

Add in the peas taking care to ensure they are well drained or your mixture may be a little too runny, if you happen to put some water in put extra gravy powder in to thicken it up

Mix well and simmer on a low heat

Preheat oven to 200C

When the potatoes are soft, drain the water off and return back to the saucepan. Add milk and butter and mix with a potato masher. You may require more or less milk depending on the amount of potato you have

Spoon the base mixture into a 2.5 litre oven proof dish with lid, spread evenly across the base

Cover with the potato mash and use a clean spoon to flatten it out gently

Sprinkle the cheese evenly across the top

Cook covered at 200C for 15 minutes and then remove the lid and cook a further 5 minutes

When cheese has melted across the top remove and cut into 4 and serve on its own or with steamed vegetables or oven fries


Note: Its a personal choice as to whether to add salt or not. I hardly ever add salt to my cooking, most of the preproduced add ins have more than enough salt and I believe it ‘numbs’ the natural taste of vegetables.
