Quiche Mini Muffins
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 4 - Makes: 12
1 onion, chopped
1 large carrot, grated
1 large zuccini, grated
1/2 cup canned corn kernels
1/4 cup grated tasty cheese
1/2 cup wholemeal self raising flour
3 eggs, lightly beaten
1/4 cup oil
Lightly cook the onion until soft
Set aside in a large bowl
Add carrot, zuccini, corn, cheese and flour to the bowl
Combine eggs and oil and stir into mixture
Spoon mixture into lightly greased muffin pans
Bake in moderate oven, 180C for 30 minutes.
Serve with fresh salad.
